When I was in college, we had a dining hall that had a few different lines of food. One always served hamburgers and French fries. On the nights that we got roast beef and gravy, I would get a full dinner plate of fries and then put the gravy all over it. Damned good.

I’m not bias but it’s better. The gravy is good thickness for poutine, the curds are chopped for better speadage, & the fries are cooks a hair well done to hold up to gravy.
